Method

    Melt the butter in a pan with most of the thyme

    Put in the steak & cook quickly on all sides, basting with the butter continuously.

    Once cooked to the customers requirements, leave to rest

    Dice all the vegetables. Sweat of the onions, then add the peppers, then the aubergine & finally the courgette

    Stir in the rich & rustic sauce & simmer for 5 mins

  6. 6

    Deep fry the sweet potato fries & drain well

  7. 7

    Serve the steak with the fries & ratatouille, garnish with some fresh thyme
