Method

    Marinade the lamb rump in the jerk sauce for minimum 2 hours

    Seal all over in hot oil & roast in the oven for 10-15 mins. Leav to rest for 10 mins

  3. 3

    Dice the onion, peppers & watermelon, Halve the tomatoes

  4. 4

    Toss together with the salad leaves in the french dressing

  5. 5

    Slice the lamb & serve with the salad
