Method

    Season & seal the beef in hot oil in a roasting tray. Sit the joint on a trivet of mixed vegetables, add a splash of water

    Cover with foil & roast in a hot oven. Approx core cooking temperatures

    Medium Rare 60C

    Medium 65C

    Well Done 75C

    Roast the potatoes in a hot oven as per the on pack instructions

    Re-heat the Yorkshire Puddings as per the on pack instructions

    Peel & quarter the parsnip & roast in hot oil for 20 mins

    Cook the carrots & broccoli in boiling salted water & make up the gravy

    Slice the beef & serve next to the vegetables & potatoes with a jug of gravy
