Method

    Rub the pork with the honey & mustard

    Seal all over in hot oil & roast in the oven for at least 30 mins until the pork is fully cooked through. Rest for 10 mins

    Keep the pork roasting juices in the tray

  4. 4

    Peel & cut the carrots into thin batons

  5. 5

    Trim the broccoli into small florets

  6. 6

    Put into the roasting tray that the pork came out of & roast for 10-15 mins until starting to soften & brown

  7. 7

    Re-heat the mashed potato as per the on pack instructions

  8. 8

    Stir a little extra honey & mustard through the roasting juices

  9. 9

    Serve the pork with the mash & vegetables & spoon over some of the roasting juices
