Method

    Sweat off the diced onion & sliced pepper with the cajun seasoning & crushed garlic

    Stir in the diced butternut & cover with the tomatoes, tomato puree & chicken stock

  3. 3

    Bring to the boil, cover & simmer for 20-25 mins until the rice & butternut are cooked

    Serve immediately with some crusty baguette
