Method

    Peel & finely dice the shallot. Peel & puree the garlic

    Soak the dried mushrooms in a little boiling water. Drain well & keep the mushroom stock to one side

  3. 3

    Wash & quarter the fresh mushrooms. Finely dice the cornichon

  4. 4

    Sweat off the shallot & garlic in a little oil & add all the mushrooms, season

  5. 5

    Sprinkle on the paprika & cook for a few minutes before adding the cornichon

    Pour on the milk & bring to the boil. Stir in the thickening granules until the desired consistency is achieved, check the seasoning

    Some of the mushroom stock may be used at this stage to adjust the consistency & flavour

    Just cover the rice in boiling salted water & cook until all the water is absorbed

  9. 9

    Serve the stroganoff in a ring of rice
