Method

    Defrost the fish overnight in a refrigerator

    Shallow fry in a little hot butter, particularly on the skin side to make nice & crispy

    Remove the fish & set aside. Squeeze a little lemon into the butter until it foams & browns

    Spoon the dauphinois into a dish & bake for 15-20 mins until golden brown & bubbling

  5. 5

    Cook the broccoli in boiling salted water for 5-8 mins & drain well

  6. 6

    Serve with the fish coated in the brown butter with the potatoes & vegetables
