Method

    Defrost the fish overnight in a refrigerator

    Cut the fish into large chunks

  3. 3

    Sweat off the diced onion in hot oil & then add the cod pieces

  4. 4

    Seal on each side & pour on the red Thai sauce, simmer for 5-10 mins

    Just cover the rice in boiling salted water & cook until the water is absorbed & the rice is light & fluffy
