Method

    Melt the butter in a thick bottomed pan & sweat off the diced onion

    Place the mussels in the pan with their juices, either defrosted or frozen

  3. 3

    Pour in the wine & cover with a lid.

    Simmer until the mussels start to open & they are fully heated through.

    Stir in the cream & some chopped parsley

  6. 6

    Deep fry the fries in hot oil until golden brown. Tip out onto paper to drain, sprinkle with a little salt

    Serve the mussels with the fries a lemon wedge & some crusty bread
