Method

    Score the rind all over, rub with oil & generously with sea salt

  2. 2

    Start the pork in the oven at 230C for 15-20 mins, turn down to 180C & roast until the meat is fully cooked through

  3. 3

    Cut the onion & apple into wedges, toss in the melted butter for 5-10 mins adding the sugar for the last few minutes

    Make up the mashed potato as per the on pack instructions

  5. 5

    Make up the gravy as per the on pack instructions

    Trim & cut the cauliflower & broccoli into florets

  7. 7

    Cook both in boiling salted water until just cooked, drain well

  8. 8

    Serve slices of the pork with the potatoes & vegetables and a jug of gravy.
