Method

    Soak the beans in plenty of cold water overnight in a refrigerator

    Cook for approx 2 hours in boiling salted water. Cool immediately

    Make up a vinegarette with the oil & balsamic vinegar

    Slice & grill the halloumi

  5. 5

    Toss together the salad leaves, diced tomato, diced cucumber, chilli, chick peas & half the shredded basil

  6. 6

    Mix in the balsamic dressing & season

  7. 7

    Place in a bowl with the halloumi on top, garnish with the remaining shredded basil
