Method

    Trim & cut the steak into strips

    Toss the steak in the paprika & fry off in a little hot oil until medium rare, put aside to rest

  3. 3

    Fry off the finely diced onion, mushroom & cornichon in the steak pan.

    Add the brandy & flame to burn off the alcohol

  5. 5

    Stir in the mustard & then the cream, bring to the boil & simmer until the correct consistency is achieved

    Add the steak back in & season to taste

  7. 7

    Just cover the rice in boiling salted water & cook until all the water is absorbed

  8. 8

    Serve the stroganoff with the rice
