Method

    Defrost the fish overnight in a refrigerator

    Make up the batter with the ice cold beer, add a little ice cold sparkling water if too thick

  3. 3

    Fry the chips in hot oil for 10 to 12 mins until golden brown. Drain well & tip on to paper to remove the excess oil. Sprinkle with a little salt.

    Dry the fish & dip in the batter. Remove the excess & deep fry at 180C for 10 to 15 mins until the batter is golden & the fish is cooked

    Reheat the mushy peas in a microwave, or in a pan on the stove until boiling & heated through

    Serve the fish next to the chips with the peas & Tartare Sauce in separate dishes & with a wedge of lemon
