Method

    Peel & de-seed the avocado. Break down with a fork with lemon juice & smoked paprika. Season to taste

    Pach the egg in boiling salted water with a splash of vinegar in it until the white is cooked & the yolk still soft

    Grill the bacon until cooked

    Toast the bread & butter each slice

    Spread the avocado on the toast & serve with the bacon & egg

    Garnish with chopped chives & a wedge of lemon
