Method

    Finely dice the onion & cut a green pepper into chunks

    Peel & chop the garlic & slice the aubergine

  3. 3

    Sweat off the onion with the garlic, oregano & pepper until soft, put to one side

    Fry off the Garden Gourmet pieces until starting to brown

  5. 5

    Stir in the chopped tomatoes & tomato puree add in the sauted vegetables & season to taste

    Melt the Flora plant in a thick bottomed pan, stir in the flour & cook until a sandy brown texture

    Gradually add hot Alpro Soya to make a bechamel sauce

    In an ovenproof dish put alternate layers of aubergine, the tomato sauce, the bechamel & the Mozzarella Sheese

    Ensure you leave a last layer of bechamel & then Mozzarella Sheese

    Bake in a hot oven for 15-20 mins until golden & bubbling
