Spicy Scrambled Egg & Cheese Bagel

Method

   Peel & finely chop the shallot & dice up the pepper

   Crack the eggs into a dish, whisk up with the milk & season to taste

   Melt a knob of butter in a pan, sweat off the shallots, pepper, Chorizo & chilli

4. 4

   Pour in the eggs & cook through whilst stirring continuously

5. 5

   Split the bagel & toast both the insides under a grill

6. 6

   Serve the scrambled egg on the bagel topped with the grated cheese & flash under the grill to melt the cheese
