Method

    Trim & dice the vegetables into 1cm squares

    Place in a roasting tray, splash with a little oil, season & sprinkle with the oregano

  3. 3

    Roast in the oven until starting to soften

  4. 4

    Transfer into a pan & stir in the chopped tomatoes & tomato puree

  5. 5

    Bring to the boil & simmer for a couple of minutes. Season if required

  6. 6

    Re-heat the jacket potato as per the on pack instructions

  7. 7

    Split the potato & servbe filled with the roasted vegetable mix
