Method

Trim & clean the bones. Spread the fat with dijon mustard

Finely chop the herbs & mix into the breadcrumbs

Cut the lemon in half. Zest half the lemon, add to the breadcrumbs with some lemon juice

Press the mustard side into the breadcrumbs ensure the pork is well coated

Cover the bones with foil. Place into a hot oven & roast for approximately 1 hour, until fully cooked.

Trim the broccoli & cook in boiling salted water for approx 5 mins

Roast the potatoes as per the on pack instructions

Trim the broccoli & cook in boiling salted water for approx 5 mins

Make up the gravy as per the on pack instructions

Serve the pork with the potatoes & vegetables & garnished with the remaining lemon
