Method

    Clean & slice the mushrooms

    Peel & chop the shallots

  3. 3

    Peel & crush the garlic

    Sweat the shallots off in a little oil & butter, add the garlic, mushrooms & thyme. Cook until soft

    Slice the ciabatta into half lengthwise, toast under the grill & cut across diagonally

    Serve the ciabatta with the rocket, some parmesan shavings & a drizzle of balsamic
