Smashed Avocado Breakfast Bagel

Method

   Peel & de-seed the avocado. Smash in a bowl with a splash of lemon juice

   Grill the bacon until fully cooked through

   Gently fry the egg in a little hot oil until the white is cooked, but the yolk is slightly runny

4. 4

   Split the bagel & toast under the grill

5. 5

   Spoon the avocado onto the bagel & top with the bacon

6. 6

   Then place on the egg & the spinach & finish with the bagel lid
