Method

Cut the potato into wedges, splash with oil & roast for approx 45 mins until the flesh is soft

Remove the skin & mash with a fork, season & add some chopped coriander

Spread the sweet potato mix onto one of the wraps

Top with chorizo slices & crumbled Feta

Place the second wrap on top

Cook on a contact grill, or in a frying pan with some hot oil for 2 to 3 mins on each side

Cut into quarters & serve
