Method

    Cream together the butter and sugars.

    Add in the egg and mix well.

    Mix in the flour and ground ginger, making sure not to overwork.

    Stir through the callets and stem ginger.

    Roll the dough into 50g balls and place onto a non-stick baking mat, spread at least 10cm apart.

    Bake at 180c for 10-12 minutes.
