Method

    Defrost the fish overnight in a refrigerator & drain well

    Put the tempura batter mix in a bowl

  3. 3

    Stir in the sparkling water, which needs to be as cold as possible

    Cut the fish into strips & pat with a little flour

  5. 5

    Dip into the batter mix & deep fry in hot oil for 5-6 minutes. Drain well

  6. 6

    Serve the goujons with a pot of dipping sauce

  7. 7

    Garnish with the rocket
