Method

    Gently melt the butter & chocolate drops & demarara sugar together, leave to cool to room temperature

  2. 2

    Whisk together the eggs & caster sugar until light & frothy & the whisks leave a trail

  3. 3

    Gently fold the cooled chocolate into the egg, so as not to knock out any of the air

  4. 4

    Seive the flour into the mixture, again as gently as possible

  5. 5

    Finally stir in the white chocolate chunks

  6. 6

    Pour into a greased lined tray & bake for 25-30 mins

  7. 7

    Leave to fully cool in the tray

  8. 8

    Cut & serve topped with whipped cream, dessert sauces & chocolate blossoms
