Method

    To make the chocolate centres, melt the dark chocolate callets, pour into Flexipan moulds of + 2cm and leave to harden.

    Beat together 8 whole eggs, 9 egg yolks & the sugar into a white creamy ribbon

    (Keep the egg whites for meringue, souffles etc)

    Mix in the remaining dark chocolate callets and the melted butter.

  5. 5

    Fold in the sifted flour carefully.

  6. 6

    Fill the moulds with the batter and push a chocolate centre into the heart.

  7. 7

    Leave to rest in the refrigerator or store in the freezer.

  8. 8

    Bake at 180c for 10-15 minutes depending on the size.
